Chef Jojo’s Spicy Rottini with Vegetarian Grounds
No salt added!

1 box dry rottini pasta (substitute any pasta)
½ onion, thinly sliced
½ lb veggie ground
¼ lb veggie BBQ pork
1 1/2 tablespoons minced garlic (4 cloves)
1 (26 ounce) jar Ragu spaghetti sauce
1 tbs virgin olive oil
1 spinach bundle
1 cilantro bundle
1 tspn hot sauce

Serves: 4
Prep Time: 15 Minutes
Cook Time: 20 Minutes
Ready In: 35 Minutes
Level: Easy
Bring a large pot of water to a boil. Add rottini pasta, and cook for 9-11 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, add olive oil over medium heat. Add the garlic and onions. Saute for 1 minute. Be careful, the garlic burns easily! Add the veggie grounds and veggie BBQ pork and saute until the veggie meats have just turned darker brown, about 5 minutes, stirring often. Add spinach and cilantro and the hot sauce and sauté for 1 minute.

When the pasta is done, drain the cooked rottini and then put it back in the pot. Immediately add the veggie meats and sauce, toss well, and serve.
