chef, Chef Jojo, will be featuring his latest, super easy creations in our
magazines.
Here’s one. I eat this one all
the time, keeps my weight closer to 100lbs and tastes real good too. Chef Jojo says,
when cooking, you gotta add love to it. Feel the love, enjoy cooking and bon
apetit!
Chef Jojo’s Spicy Rottini with Vegetarian Grounds
No salt added!
1 box dry rottini pasta
(substitute any pasta)
½ onion, thinly sliced
½ lb veggie ground
¼ lb veggie BBQ pork
1 1/2 tablespoons minced garlic
(4 cloves)
1 (26 ounce) jar Ragu spaghetti
sauce
1 tbs virgin olive oil
1 spinach bundle
1 cilantro bundle
1 tspn hot sauce
Serves: 4
Prep Time: 15 Minutes
Cook Time: 20 Minutes
Ready In: 35 Minutes
Level: Easy
Bring a large pot of water to a boil. Add rottini pasta, and cook for
9-11 minutes, or according to the directions on the package.
Meanwhile,
in another large (12-inch), heavy-bottomed pan, add olive oil over medium heat.
Add the garlic and onions. Saute for 1 minute. Be careful, the garlic burns
easily! Add the veggie grounds and veggie BBQ pork and saute until the veggie
meats have just turned darker brown, about 5 minutes, stirring often. Add
spinach and cilantro and the hot sauce and sauté for 1 minute. When the pasta is done, drain the cooked rottini and then put it back in the pot. Immediately add the veggie meats and sauce, toss well, and serve.
